What are the things to look for or look out for when buying a shutter release cable? I see them here on the internet for anywhere between $8 and $50. What makes a $50 cable better than an $8 special?

Some very inexpensive cable releases are well made and work as well as anyting.
Some differences you can look for:
A cloth or metal mesh cover is more supple, especially in cold weather, than a vinyl-covered release. Vinyl tends to shrink away from the ends as well.
There are a number of release lock designs. The thumbscrew in the side is reliable, but more bulky than the designs with a lock at the base of the release button.
I can recommend Nikon's cable release. It's a nice one and you can find it at a reasonable price. But don't hesitate to use any functional cheap release.
